Organic Spinola Gavi

Gavi, traditional, fresh, light, easy to drink. It is an elegant wine with an intense nose, but refined with floral and fruity notes. The grapes come from the hills around Lake Alborina.

It is an excellent aperitif that can also accompany rather light dishes so as not to upset the balance between food and wine.

Produced and bottled by Castello di Tassarolo dei Marchesi Spinola Vineyard-estate, Tassarolo (Italy)

 

Production area:
selected hillsides in the Municipality of Tassarolo, located in the production region of Gavi DOCG, Piemont.

 

Terroir:
marley, silty-clay, with a good proportion of organic matter due to the use of "green-manure", biodynamic preparations and biodynamic compost.

Altitude:
300 meters above sea level.

Grape varieties:
Cortese de Gavi (100%).

Production techniques and vinification

The large area planted with vines on the Castello di Tassarolo estate, and the relatively small number of bottles produced, allow us to carry out the ruthless selection in the vineyards, aiming to achieve a quality product. The grapes are collected in perforated boxes containing a maximum of 19 kg. They are brought to the cellar and immediately pressed using a modern pneumatic press. Only the juice of the must is transferred to the thermostatic tanks for the start of alcoholic fermentation. This is carried out at controlled temperatures taking time, and under constant analytical monitoring.

With the complete transformation of sugars into alcohol, the process is complete. We take great care not to damage the intrinsic qualities of the wine until bottling. This wine is 100% handmade.

Aspect:
straw yellow with marked green reflections.

Nose:
intense aroma with notes of orange blossom and chamomile.

Mouth:
fresh, fragrant, light, lively and persistent.

Yeasts:
indigenous, from our own grape varieties.

Alcohol:
12 - 12.5% by Vol.

Total acidity:
about 5.20 g / l

Production:
40,000 bottles.

Certification:
Organic certified by Bios.
