Production area:

selected hillsides in the Municipality of Tassarolo, located in the production region of Gavi DOCG, Piemont.

 

 

 

Terroir:

marly, silty clay, with a good proportion of organic matter due to the use of "green manures", biodynamic preparations and biodynamic compost.

 

Altitude:
300 meters above sea level.

 

Grape varieties:
Cortese de Gavi (100%).

 

Production techniques and vinification

 

The hilly region of the Castello di Tassarolo vineyard is in a class of its own. It has all the characteristics necessary to make a great wine. From the winter pruning and later with all the operations necessary for the cultivation of the vine, it benefits from special attention. We are rewarded by the particular quality of the grapes it produces. In their entirety, they express everything that is meant by the term Superiore. The late harvest, exclusively by hand, a light cold maceration and a gentle pressing intended for a maximum must yield of not more than 60%, allow us to ferment a must with the special qualities that will subsequently characterize wine . Fermentation is carried out at low temperature. Once the wine is made, every operation, right up to bottling, aims to preserve the quality we are looking for. It is 100% handmade.

straw yellow with marked green reflections.

 

Nose:
intense fragrance with floral notes of mature citrus.

sweet, lively and persistent.
