Olive oil

As for wine, for several years we have taken the time to visit many producers to learn more about the products and the ways of doing it. From the pruning of the trees, through the harvest or the extraction of the oil and the different methods of decantation.

Over time we have found producers working naturally with quality in mind.

Here we offer varieties of olive oil that are cold pressed immediately after harvesting so that both the aromas and the antioxidants are preserved.

And as with wine, there is oil and oil. If each oil we offer is authentic, they have different flavors depending on the cultivar (equivalent to the grape variety), the terroirs, the climate,... and the processes used for the extraction, the decantation.

Our oils are certified organic, to avoid insecticides commonly used in conventional agriculture.

The importance of an organic oil

Certain insects are formidable in degrading the olives, whether it is the olive fly or other parasites. In conventional agriculture, to protect the fruits, a spray of a persistent insecticide will preserve the fruits throughout the season. Unfortunately for us humans, we are also sensitive to these powerful neurotoxic insecticides.

So in organic, of course we don't spray insecticides but a kind of clay that will wrap the olives, preventing insects from reaching the olives. The disadvantage of this second skin is that it leaves with the water, so it will be necessary to carry out the treatment several times in case of rain but also to add a cleaning step before pressing the olives.

! As with wine, attention should be paid to the sstorage: store in a cool, dry place, away from light and sources of heat, at a temperature of around 15°!
