From a single plot: the grapes come from the oldest vineyard of the estate called "Vigneto Alborina". It has been matured in oak barrels and is ideal for aging - up to 15 years. It is an elegant and powerful wine which, when paired with food and wine, can replace certain red wines.Organic & biodynamic.

Produced and bottled by Castello di Tassarolo dei Marchesi Spinola Vineyard-estate, Tassarolo (Italy)
Production area:
from a single "Cru" plot, in the Municipality of Tassarolo, located in the production region of Gavi DOCG, Piemont.
Terroir:
marly, silty clay, with a good proportion of organic matter due to the use of "green manures", biodynamic preparations and biodynamic compost.
Altitude:
300 meters above sea level.
Grape varieties:
Cortese de Gavi (100%).
Production techniques and vinification
The production of this wine involves a high quality of the processed grape given not only by a healthy, analytical appearance, but by a certain organoleptic conviction, too.
Our long-standing experience has led us to choose a single vineyard, among our 20 hectares, ideal for achieving our final result.
The grapes, collected in boxes, are pressed to obtain a must which, once clarified, is fermented.
At an alcohol content of 5% by volume, part of this partially fermented must is transferred into barrels, where all the sugars are extracted.
After slow static settling and distancing from the largest lees,
the aging process can begin and continue for several months.
The fusion of this wine from barrels with that left in stainless steel tanks gives an energetic but elegant and fresh wine.
This wine is 100% handmade.
Tasting notes and data
Aspect:
straw yellow with marked green reflections.
Nose:
Intense complex aromas with moderate but discreet notes of wood, but not cloying.
Mouth:
soft, caressing with an elegant concentration and a beautiful length.
Yeasts:
indigenous, from our own grape varieties.
Alcohol:
12 - 13% by Vol.
Total acidity:
about 5.30 g / l
Production:
6,000 bottles.
Certification:
Organic certified by Bios.
Versatile wine with sufficient character to accompany most dishes. Potential aging of 15-20 years, to be served at a temperature of 10-11 ° C.
